Being hung over as hell on Sunday morning makes you need a big breakfast. Not to mention my husband is pretty awesome so I figured I should make him something yummy. And I had found this pin earlier in the week on Pinterest and decided this was something I needed to make at some point. Anyways, I was pretty determined.

Pumpkin Waffles with Apple Cider Syrup
Ingredients
I will warn you right now that you'll likely have a massive pile of dishes when you're done, mine are still in the sink... And if you're looking for a quick and easy breakfast this is not the recipe for you.

- 2 1/2 cups all-purpose flour
- 4 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 cup packed brown sugar
- 1 cup canned pumpkin
- 2 cups milk
- 4 eggs, separated
- 1/4 cup butter, melted
- 1/2 cup white sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1 cup apple cider
- 1 tablespoon lemon juice
- 2 tablespoons butter
- Preheat a waffle iron according to manufacturer's instructions.
- Combine the flour, baking powder, cinnamon, allspice, ginger, salt, and brown sugar in a mixing bowl. In a separate bowl, stir together the pumpkin, milk, and egg yolks. Whip the egg whites in a clean dry bowl until soft peaks form.
- Stir the flour mixture and 1/4 cup melted butter to the pumpkin mixture, stirring just to combine. Use a whisk or rubber spatula to fold 1/3 of the egg whites into the batter, stirring gently until incorporated. Fold in the remaining egg whites. Cook waffles according to manufacturer's instructions.
- To make the syrup, stir together the sugar, cornstarch, and cinnamon in a saucepan. Stir in the apple cider and lemon juice. Cook over medium heat until mixture begins to boil; boil until the syrup thickens. Remove from heat and stir in the 2 tablespoons of butter until melted. Serve warm.

After putting all the ingredients together I soon realized I'd have a crap ton of waffles... But it was a little late at this point...
Yea I was quickly ban from the waffle machine... And since you all weren't there I'd like to claim that's the only one that over flowed and I totally didn't have to spend an hour scrubbing the hell out of the waffle machine....

The Taste?
Damn good if I do say so myself. The waffles by themselves were pretty good. They did taste like pumpkin, were fluffy, but sadly they didn't quite crisp the way I hoped some but I think that was more on my waffle makers side so I won't fault the recipe.
What really made it was the syrup. Honestly I could but that in my morning routine, it was like crack. I could have drank it, put it on my cereal, in my coffee, on ice cream. But that could be due to my LOVE for apple cider. Seriously one of my favorite things about fall.
